Banana Cookies

If you know me, you know I LOVE cookies. They are my weakness… chocolate chip, peanut butter, oatmeal… I love them all! If fact, they are one of the main culprits in my second pregnancy weight gain. There wasn’t a cookie I said “No” to.

Now I am on a search for healthy cookie recipes to satisfy my love for them. Here is my first attempt at a healthy cookie. I liked them, but my son Elijah, did not. Give them a try if you wish and enjoy!

Banana Applesauce Cookies

Ingredients:

3 Ripe Bananas
2 Cups Rolled Oats
1/3 Cup Applesauce (unsweetended)
1 tsp. Vanilla Extract
1 Tbsp. Ground Flaxseed
1/2 Cup Dried Cherries

Directions:

Preheat oven to 350 degrees. Using a fork, mash bananas in a bowl. Stir in oats, applesauce, flax, vanilla, and dried cherries. Drop by rounded spoonfuls onto a lined cookie sheet. Bake for 20 minutes.

**I used mini chocolate chips because I didn’t have dried cherries. The first batch I baked, it did it for about 18 minutes. They stayed in the ball shape and burnt a little on the bottom (I tend to make my cookies smaller than most people.) The second batch I flatted the cookies and baked for about 10 minutes leaving them a little softer. To some, they may not have been done enough, but that’s how I like my cookes. 🙂
