Carrot Cake Protein Bars

 

I have been on the hunt for clean, delicious snacks and ran across this EASY recipe from Jamie Eason (Fitness Model/Writer). The only problem with this recipe is that it is SO good! It’s like eating cake and I want the whole thing. ūüôā

 

Ingredients:

1 Cup Oat Flour

2 Scoops Vanilla Whey Protein

2 tsp Cinnamon

1/2 tsp Baking Soda

1/4 tsp Salt

1/8 tsp Allspice

1/8 tsp Nutmeg

4 Egg WHITES

3/4 Cup Splenda, Stevia/Truvia, or Ideal

8 Oz Baby Food Carrots

4 Oz Water (Optional)

 

Directions:

Preheat oven to 350 degrees.

Mix flour, whey protein, cinnamon, allspice, nutmeg, baking soda, and salt in a bowl. In a separate bowl, Mix egg whites, splenda, baby food carrots, and water together. Add wet ingredients to dry ingredients and mix well. Spray glass 8×8 Pyrex dish with non-stick butter spray. Pour into dish. Bake 20-30 minutes until toothpick test comes out clean.

 

Makes 16 squares (serves 8)

 

Calories: 94                   Fats: 1.25g

Protein: 10g                  Fiber: 2g

Sugar: > 1g

 

I do not use Splenda and did not have Stevia, so I used 3 TBSP of RAW Agave Nectar and only used 1-2 oz of water. It added more calories and sugar, but it wasn’t overly sweet and I was not concerned with the added calories.¬†¬†Jamie said you do not have to use any sweeteners, it will just taste more spicy that way.¬† Play with the recipe and even make different flavors.¬† She did suggest to keep the vanilla whey protein powder flavor as your base.

 

Added not, I had to bake mine for about 32 minutes, but the agave probably added extra moisture.

 

This is about what mine ended up being per serving using the agave:

 

Calories: 132                 Fats: 1.25g

Protein: 11g                   Fiber: 2.5g

Sugar: 6g

Let’s talk Sports Bras

I do not like bra shopping.¬† It is frustrating and time consuming to try to find the ‘perfect’ bra.¬† You FINALLY find something that you kind of like and¬†after you get home and wear it, you end up regreting the purchase.¬† For me, the same goes with sports bras.¬† You either don’t get enough support or you look like you are hiding a football under your shirt.

I feel I have finally found a sports bra that works for me (at least for now)… Fiona by Moving Comfort!¬† It is comfortable and supportive, even¬†during my high impact workouts.¬† Amazon is the cheapest place I have found the bra and I have included a quick link for your convenience.¬†¬† Ladies, we need to help each other out… please share if you have one you recommend!

Banana Cookies

If you know me, you know I LOVE cookies. They are my weakness… chocolate chip, peanut butter, oatmeal… I love them all! If fact, they are one of the main culprits in my second pregnancy weight gain. There wasn’t a cookie I said “No” to.

Now I am on a search for healthy cookie recipes to satisfy my love for them. Here is my first attempt at a healthy cookie. I liked them, but my son Elijah, did not. Give them a try if you wish and enjoy!

Banana Applesauce Cookies

Ingredients:

3 Ripe Bananas
2 Cups Rolled Oats
1/3 Cup Applesauce (unsweetended)
1 tsp. Vanilla Extract
1 Tbsp. Ground Flaxseed
1/2 Cup Dried Cherries

Directions:

Preheat oven to 350 degrees. Using a fork, mash bananas in a bowl. Stir in oats, applesauce, flax, vanilla, and dried cherries. Drop by rounded spoonfuls onto a lined cookie sheet. Bake for 20 minutes.

**I used mini chocolate chips because I didn’t have dried cherries. The first batch I baked, it did it for about 18 minutes. They stayed in the ball shape and burnt a little on the bottom (I tend to make my cookies smaller than most people.) The second batch I flatted the cookies and baked for about 10 minutes leaving them a little softer. To some, they may not have been done enough, but that’s how I like my cookes. ūüôā

Does healthy food cost more?

You hear it everywhere, “Healthy food is so expensive!”¬† or “I just can’t afford to eat healthier”.¬† The same people that say that will stop off at a bakery or a local fast food joint and spend $6.00 on a meal for one person.¬† Why are we so willing to spend $1.69 PER COOKIE at¬†the bakery, but think that $1.69 (give or take)¬†for a pound of apples is WAY too expensive?

 

Now, I’m not saying I don’t go to the bakery on occasion and I’m not telling you that you shouldn’t go to the bakery (on occasion).¬† What I am saying is maybe we don’t have our priorities straight.¬† Food is supposed to be FUEL for our body.¬† It is supposed to give us energy and strength not make us drained and craving more junk.
