Flourless Cookies

I love cookies! There has never been a cookie I wouldn’t eat, but homemade are my favorite.  I love to bake, but I don’t always love all the steps of making typical cookies…because sometimes I just want a cookie.  Try out these delicious and easy flourless cookies!!  As you can see, there are many variations you can do with the base ingredients!

Ingredients:

1/2 Cup All Natural Nut Butter (Left is Peanut Butter, Right is Almond Butter)

1 1/2 Tbsp Coconut Sugar

1/2 – 1 Tbsp Raw Honey (I added it for moisture, you can substitute more coconut sugar if you wish)

1 Egg

1/4 tsp Baking Powder

1 Tbsp (plus a little extra for on top) Dark Chocolate Chips (I use Lily’s Chocolate Chip sweetened with Stevia)

1/2 tsp Vanilla (OPTIONAL)

 

Directions:

Combine all ingredients in a bowl (except chocolate chips) and mix until well combined. Stir in chocolate chips.  Drop on cookie sheet lined with parchment paper (approximately tablespoon sized). These cookies don’t spread like normal cookies, so flatten a little and put more chocolate chips on top if desired.  Bake in preheated oven at 350 degrees for 7-8 minutes. Let cool and devour!  I got 9 cookies out of this.

 

Tally’s Tips:
*Don’t overcook or the cookies will be dry. Boo!!!

*Get creative! Try another nut butter (although peanut peanuts are not technically a nut). Cashew, yes please!

*Try adding additional ingredients. I used crunchy peanut butter and it was awesome…for some reason, it does make them a little more dry.
